Mushroom & Black Pudding Stuffing

Ingredients:

  • 1tbslp Olive oil/ low calorie oil spray
  • 1 Clonakilty Black Pudding (Roughly Chopped)
  • ½ Medium Onion (Finely Diced)
  • ½ Punnet of mushrooms (Finely Diced)
  • 1 clove of Garlic (Crushed)
  • 1tblsp Sweet Chilli Sauce Salt & Pepper to Taste

Method:

  1. Heat the oil in a large pan over a medium heat.
  2. Add the black pudding, mushroom and onion and sauté until soft. §Add the garlic and cook for another 2-3 mins.
  3. Remove from the heat and tip mixture into a bowl and allow to cool slightly
  4. After a few mins stir in the sweet chilli sauce and mix until it looks like a chunky pate
  5. This filling can be used to stuff pork fillet, chicken breasts, sausage rolls, spring rolls, etc. or to top a bruschetta for a delicious starter.
