Babaganoush

Ingredients:

  • 2 aubergines
  • 1 red pepper
  • 1 bulb of garlic
  • 1 tbsp tahini paste
  • 2tsp cumin
  • 2 tsp smoked paprika
  • 1tbsp olive oil
  • Salt and black pepper to taste

Method:

  1. Preheat oven to 200 degrees
  2. Cut the pepper and aubergines in half and place on a roasting tray
  3. Cut the garlic bulb in half and add to tray
  4. Brush everything with a little olive oil and roast in the oven for 15-20 mins
  5. Once out of oven leave to cool for a few mins
  6. Scoop flesh from aubergine & remove skin from pepper
  7. Put in a food processor with all other ingredients
  8. Squeeze the roasted garlic in
  9. Blitz until you have a smooth thick mix (add more olive oil if too thick)
