Ingredients:
- 75g Caster Sugar
- 300ml Cream
- Juice of 2 lemons
Method:
- Add cream and sugar to a saucepan and gradually bring to the boil.
- Once boiling reduce heat and simmer for a further 3 mins approx.
- Place a sieve over the pot and squeeze your lemons into the cream mixture. Throw away the pips.
- The mixture should start to thicken slightly after a few mins.
- Pour into glasses, cups or bowls and place in the fridge to chill for 2-3 hrs.
- Top with some fresh berries and serve with shortbread biscuits.
