Creamy Lemon Posset

Ingredients:

  • 75g Caster Sugar
  • 300ml Cream
  • Juice of 2 lemons

Method:

  1. Add cream and sugar to a saucepan and gradually bring to the boil.
  2. Once boiling reduce heat and simmer for a further 3 mins approx.
  3. Place a sieve over the pot and squeeze your lemons into the cream mixture. Throw away the pips.
  4. The mixture should start to thicken slightly after a few mins.
  5. Pour into glasses, cups or bowls and place in the fridge to chill for 2-3 hrs.
  6. Top with some fresh berries and serve with shortbread biscuits.
