Ingredients:
- 2 aubergines
- 1 red pepper
- 1 bulb of garlic
- 1 tbsp tahini paste
- 2tsp cumin
- 2 tsp smoked paprika
- 1tbsp olive oil
- Salt and black pepper to taste
Method:
- Preheat oven to 200 degrees
- Cut the pepper and aubergines in half and place on a roasting tray
- Cut the garlic bulb in half and add to tray
- Brush everything with a little olive oil and roast in the oven for 15-20 mins
- Once out of oven leave to cool for a few mins
- Scoop flesh from aubergine & remove skin from pepper
- Put in a food processor with all other ingredients
- Squeeze the roasted garlic in
- Blitz until you have a smooth thick mix (add more olive oil if too thick)
